No Butter Garlic Bread



Sometimes it's just a Garlic Bread night.
This was one of those nights.
We're super tired from cleaning up from our 
80's party
(post and pics coming soon)
and all I wanted for dinner was canned soup
and Garlic Bread.
So I must say that writing about our 
boring Sunday night meal
seems really nutty to me,
but, I'm nutty so here it is.
and the brand has a low sodium
chunky tomato bisque.
I try to buy low sodium prepared foods 
as much as possible for TrueLove
because sodium is hidden in everything and it's 
not the Celtic Sea Salt health food kind that they hide everywhere.
We had really good sausage left over from the party,
so we tossed it in the soup,
along with some frozen peas
and now our soup is more like a meal.
We're always doctoring up our canned soup,
not because the soup needs it,
just because it's fun to switch it up and
keep it new and exciting.
And really the soup is just a side dish to the
main attraction-
Garlic Bread!
I know that I am not scoring any points with gourmet readers
or even healthy food eaters here with my 
canned soup and 
Safeway bread.
I am a sucker for the french bread and sourdough bread
that comes from the Safeway bakery.
It's so soft, fluffy and airy.
I really do love it and they baked it fresh today
so it was extra soft and extra soft!
So here's how we did the garlic bread:

Safeway French Bread Loaf
1/4 C coconut oil slightly melted
3 cloves of garlic, minced
Celtic Sea Salt
Ground Pepper
Dried Sweet Basil

 Lay some foil on a cookie sheet.
Slice loaf through the center lengthwise.


Put the coconut oil in the microwave about 15 seconds to soften it.
(In the summer you don't need to do that.)
Spread the coconut oil equally on both pieces, on the soft center.
Do the same with the minced garlic.
Sprinkle the salt and pepper over it
and the sweet basil.


Put it in the oven for about 10 minutes.
It won't get brown like butter but it will turn a light
lovely golden color.



Then slice and enjoy.


Especially when you just plunge it into the soup
like a toasted, salty, crunchy sponge.
It's so good!
Perfect simple, easy, Sunday night dinner.

  1. I can't believe you eat canned soup!! Haha! I love that you wrote about it. Now I want grilled cheese and tomato soup!
